The days are getting shorter and the nights colder as we head further into Autumn and closer to Winter. Our bodies start craving warming food. Festive Golden Chicken made with Chinese Five Spice is a delicious Chinese dish that will warm you up and delight your taste buds. 8 chicken thighs and wings (leave the skin on)
3 spring onions, shredded
4 tbsp groundnut oil or peanut oil
6 garlic cloves, finely chopped
Fresh ginger, finely chopped (approx. 8 cm.)
4 tbsp Shaohsing Rice Wine
4 tbsp Light Soy Sauce
4 tbsp honey
4 tbsp Chinese Five Spice
Whisk together ingredients for Marinade. Put chicken in dish, coat with Marinade then cover chicken and chill in fridge for at least 20 minutes or up to a day.
Heat oven to 180C. Move chicken to a roasting pan and roast in the oven for 40 minutes. Cover with Marinade left in dish and roast for another 30 minutes, until sticky and golden.
To serve, sprinkle with spring onions.
Or make Sticky Chinese Wings, take 16 chicken wings and make a Marinade of:
125ml soy sauce
125 g brown sugar
2 tbsp white wine vinegar
Black cracked pepper
Coat chicken wings and place in roasting pan with the marinade. Roast for 40 minutes, turning occasionally.
