The Meaning of Moon Festival

It’s that time of year again when we’re preparing to celebrate the annual Mid-Autumn Moon Festival, a celebration that has a rich cultural and spiritual heritage, being celebrated among the Chinese community for thousands of years. Here at Tang, we love sharing parts of our heritage and culture with our customers; so here’s a little synopsis of the exciting event that is the annual Moon or Harvest Festival!

Origins:

 The rich cultural history of the Mid-Autumn Moon Festival spans back as early as the 11th Century B.C, during the Zhou dynasty. Ancient emperors of the time used to worship and offer sacrifice to the moon in autumn, as they believed that the practice would bring them a plentiful harvest the following year. Traditionally, the harvest festival is celebrated on the 15th day of the 8th month of the lunar calendar (late September/early October in western society).

Throughout the centuries since the celebration’s creation, adaptations brought about by various Dynasties have increased the popularity of the festival, now known for its widespread communal celebration and worship activities throughout Mainland China and areas of south east Asia.

Celebration:

 The excitement of a new harvest brought together families of the early Chinese dynasties so they could worship and offer food ‘sacrifices’ to the moon in the hope of a prosperous return.

Traditionally, performed outside under the full moon, a feast of fruits and Mooncake were shared during the celebration, whilst burning incense and releasing lanterns. Gifting and consuming of Mooncake originated as part of the harvest worshiping practices and have remained a symbolic gift of reunion.

Mooncake:

Mooncakes are round pastries made from red bean or lotus seed paste, surrounded in thin pastry and often filled with a salted duck egg. Traditional Mooncakes have an imprint on top consisting of the Chinese characters including ‘Harmony’ and ‘Longevity.’ A symbol of togetherness, Mooncake were seen and an indispensible delicacy as part of the Harvest celebration and have continued to gain popularity up to the current day.

In modern society, it is customary to present them to friends and family as gifts. Mooncake recipes have been diversified with the use of contemporary fillings including chocolate and green tea flavourings, making them all the more appealing to those in western society.

5 Famous Types of Delicious Japanese Noodles

Noodles are one of the staple foods in many cultures including Japan. A lot of Japanese dishes use noodles as the main ingredient, such as Ramen and Udon. Small shops, restaurants, and even food vendors during the festivals are filled with all kinds of noodles. So what are some of the most famous and tasty noodle dishes in Japan?

Miso Ramen

Ramen (ラーメン) is a noodle soup dish which comes from China. The noodles are made from wheat and are served in a bowl with some toppings, such as Chashu (Sliced pork), Menma (Bamboo shoots), soft-boiled eggs or some kind of seaweed. Soy sauce or miso is often used in the soup to make it even more delicious. There are several types of ramen, usually each region has its own ramen style.
The most popular types are:

  • Shoyu (醤油, Soy Sauce), with clear brown chicken broth and soy sauce soup. This ramen often uses meat as the topping, such as pork, beef or fish.
  • Miso (味噌, Soybean Paste), the ramen soup is flavored with soybean paste (miso) and oily chicken or fish broth intended to warm your body. This ramen is from Hokkaido, and is suitable to its cold weather.
  • Shio (塩, Salt) ramen features are light soup with clear broth. Usually, it uses chicken broth with a lot of salt. Meat is usually added as a topping, such as pork or beef, and narutomaki.
  • Tonkotsu (豚骨, Pork Bone), originated from Kyushu. The broth is cloudy white, made of pork bones which have been boiled until dissolved.

Tempura Udon

Udon (うどん) is kind of Japanese noodles with thick texture made of wheat flour. Usually, they are served hot in a simple dish (Known as kake udon) or flavoured broth Kakejiru. Kakejiru is a blend of dashi, soy sauce, and mirin. Some toppings are also added such as tempura, chopped scallions, and tofu. Each region has different way to served udon, cold regions such as Hokkaido often use more soy sauce and oily broth to keep the body warm.
The popular udons are:

  • Curry Udon, udon noodles combined with Japanese curry. This udon is most suitable for the winter.
  • Tempura Udon, usually served with hot broth and tempura as the topping.

Soba

Soba

Soba (そば) noodles are made of buckwheat and are as thick as spaghetti. The dish can be served hot in noodle soup or cold with dipping sauce. Different from others noodles dishes that are sometimes seasonal only, Soba dishes are available throughout the year because buckwheat can be harvested four times a year. Soba is popular in all regions of Japan and can be easily found in many small shops and restaurants. Soba noodles are also available in dried form in supermarkets, or in online stores.

Yakisoba (焼きそば) is also made of buckwheat. It originated in China and became popular in Japan. Yakisoba noodles are served grilled or fried mixed with meat, vegetables, and garnished with red ginger. This noodle dish can be easily found during any Japanese festival.

Somen

Somen

Somen noodles are made of white flour. They are thinner than Udon and Soba. Sōmen are usually served cold with tsuyu (Dipping sauce). During summer, sōmen are chilled and eaten on the hot day to stay cool.

Nagashi Somen

There is a unique tradition in Japan associated with somen. “Nagashi Somen”, or act of catching somen noodles that are flowing in the water through bamboo gutter with chopsticks, and dipping them into cool broth before eating.

Winter is Coming. Warm up with Hot Pots and Soups!

It’s starting to get cold and wet, so it’s time to warm up with Soup, Noodles and Hot Pot. This week we feature some of our most popular products – from China, Korea and Japan, as well as some delicious new treats from Malaysia.

From the Samyang Food Company and the Nongshim Company of Seoul in Korea we have their exciting and ever popular Ramen dishes.

Hot Chicken Flavour Ramen with the spicy hot rating of 2x are a delicious, easy to make instant noodle dish – ramen style.

Black pepper, chilli peppers, this dish has the highest ‘Shu’ rating of all the Samyang Instant Ramen products. It crashes in at ‘8706 Shu’. Shu is the Scoville scale measurement of chilli heat in any product – Hey this is Hot, Hot, Hot – Can you feel the heat??

From the Nongshim Company we have Budae Jjigae Noodle Soup, Korean Spicy Flavour with Real Kimchi. 4 serves of 127g per pack, this is a truly delicious and popular Korean noodle soup snack. Easy to prepare, just add the contents to 500ml of boiling water, cook for 4 1/2 minutes, stir well and serve. So yummy!

So its time for Hot Pot? You will need the perfect paste, and we have it here. Very popular from China we have two delicious hot pot pastes from the Chengdu Shu Cui Fang Food Company.

In the Red package we have the more liquid, oil based paste, a much hotter and spicy paste. In the Orange package, a more solid, less spicy variety. You choose. Ask our staff to guide you and help you find the right hot pot paste to suit your taste, and the dish you are preparing.

And from Japan we have two more Noodle Soup favourites. The Fujiyama Corporation offers both Umamidashi Shio and Kooumi Maro Miso soups. Both are ever popular and come ready to microwave in their containers. Add shallots, tofu or your favourite protein – prawn, chicken or pork. Many people prefer the soups just as they are.

Finish your meal with sweet cakes from Fujiyama Corporation. Try the very popular Kuri Iri Dorayaki – flavoured with Red Bean and Chestnuts, or maybe you might prefer Azuki Dorayaki – flavoured with Japan’s signature Red Azuki Beans. With 5 per pack there are enough to share. But when you bite into the cake and taste these delicious centres – you may want to keep them all for yourself.
